Reinkjøtt i Norge

Det er urfolket samene som driver med reindrift i de nordiske landene Finland, Sverige og Norge. Legislativt sett har urbefolkningen eneretten for å drive med reindrift. Denne næringsgrenen kontrolleres av den norske Nærings- og fiskeridepartementet. Problemet med reindrift i de nevnte områdene er at det finnes lite beiteland. De ligger i umiddelbar nærhet av landsbyer.

Reinkjøtt er populært i Norge året rundt. Man kan finne det i hver norsk restaurant. Mangel på reinkjøtt kompenseres ved import fra andre land. Den viktigste engrosleverandøren er firma «ООО Meat Deer». I de endeløse landområdene i Sibir er det mulig å få økologisk kjøtt som tilsvarer internasjonale standarter og organisere eksport til europeiske land.

I Norge foredles reinkjøtt på lokale fabrikker hvor man bruker enten eget råstoff eller importerer det fra andre land. Det brukes for å lage forskjellige delikatesser (snacks,hermetikk, tørket kjøtt, pølser) man kan kjøpe på butikker og i supermarkeder. Alt dette kan man også bestille på nett.

Overalt hvor det brukes reinkjøttprodukjon, er den veldig populær. I pubber kan man bestille tørket kjøtt, chips av reinkjøtt eller røkte pølser som går bra med øl. På restauranter står ulike retter av magert kjøtt på menyen. Reinkjøtt er magert og smaker godt i all slags retter. Det inneholder mange amynosyrer (16 typer), vitaminer og mineraler og er derfor veldig sunt.

I norske skog finnes det rundt 250 000 reindyr, som er mer enn lokal befolkning. Reinkjøtt er nummer to etter fårekjøtt når det gjelder spisevaner. Retter av reinkjøtt er noe nordmenn er stolte over.

Norske kokker finner på nye resepter som de presenterer på ulike gastronomiske festivaler, for eksempel Gladmat i Stavanger, Smak i Tromsø og Trøndersk matfestival i Trondheim.

I det siste finnes det i Norge også halalkjøtt som både kan spises av muslimer i Norge og eksporteres til muslimske land.

Det finnes visse nyanser ved å lage retter av fårekjøtt. Hvis man ikke gjør det riktig, vil kjøttet bli hardt. Ettersom fårekjøtt ikke inneholder fett bør det utvannes i tørr vin eller fruktsaft. Etterpå blir kjøttet mykere og mer saftig. Retter av reinkjøtt har en lang historie, og noen familier har bevart egne tilberedelses hemmeligheter.

Prisen på kjøttet er avhengig av typen. Særlig verdifult er hals- og ryggkjøtt. Filet brukes for å lage forskjellige retter (bakte, stuede, stekte). Låret koster også ganske dyrt. De av større rein kan veie opp til 15 kg. Det brukes til å gjøre hakkemat som kan tørkes eller røykes. Innmaten (hjerte, nyrer og lever) selges også til en høy pris.

Et stort russisk firma lader nye kunder fra Norge opp til samarbeid. Nye kunder kan profitere av et gunstig rammeverk.
